A new chapter begins for iconic Auckland restaurant FISH
Following three months’ closure, an Auckland icon reopens its doors with a new vision. FISH Restaurant by Hilton Auckland is paying homage to its name and location with a hybrid casual-fine dining experience like no other. Boasting panoramic views of the Waitematā Harbour, FISH is arguably one of Auckland’s most sought-after spots for sunset. With a new multi-award winning culinary director at its helm, Des Harris, FISH is being taken to new heights (literally), and it’s set to be one of summer’s most talked about comebacks.
Alongside Harris, Josh Seeds will join as executive chef, leading the kitchen team and further elevating the dining experience. Together, with decades of extensive culinary refinement, the duo seeks to bring a fresh, inventive style of dining to FISH this season. As the name hints, seafood will remain at the heart of FISH. Adhering to a strong sustainability ethos—from local suppliers to catching methods—it aims to showcase the highest possible standard of fare, “prepared well and served simply,” according to Seeds.
Working closely with Tora Collective to source their pāua, there’s an emphasis on relationships and sustainability every step of the way. “We’ll put an order in on Sunday and they dive and source for delivery that week, only sourcing what we require, leaving the rest to chill until the following week,” explains Seeds. Expect to find seafood you won’t often find elsewhere. Think pāua, scampi, smoked eel, and blue cod, with a contemporary twist. For instance, the quintessentially Kiwi fish and chips, feature fresh blue cod in a sourdough starter batter, served with a caviar and buttermilk ranch dressing, and hand cut chips.
Paired with some of the best views in Auckland, an impressive wine list and a focus on impeccable service, FISH promises to deliver an unforgettable dining experience this summer.
