Summer plays host to a number of phenomenons. You have the standards; longer days, warmer temperatures, and maxo relaxo time at the beach, but through all of that, there is a summer ritual that outshines all the rest... everyone’s willingness and eagerness for Friday knockoffs. 



But not all Friday lunches are made equal, and to ensure you’re getting the most out of the best day of the week, here are a few Remix certified accompaniments… 

What to drink...

The Red Bull Tropical Spritz

Last Friday lunch, strictly for research purposes, the Remix team ventured down to Coops Corner Pub to put a few summer sippers to the test. The pecking order and social protocols of the Friday night beverage are more intricate than you might think, and they’ve come a long way in recent years. We’ve done the march through summers endless, pink-hued drink purgatory and have replaced it with a lighter, fresher, yellow substitute. Enter; the Tropical Spritz, the most refreshing summer aperitif you need to put on your to-drink list. 

The perfect pre-meal palette stimulator, the beauty of the Red Bull Tropical Spritz is that it’s relatively low in alcohol, so if you’re trying to impress your bosses after work, or you’re in it for a long time and a good time, there really is no need to look further than this tasty cocktail. If it’s not quite knockoff time yet, but you still want to enjoy a cold one over lunch, the Tropical Spritz is going to become your new go-to. It has just the right amount of Dry Vermouth to make you chatty and fun, but not enough to encourage you to backchat your boss or send questionable emails upon returning to work. It also has just the right amount of Red Bull kick to see you through to the end of the day. 

 

Here’s what’s involved… 

  1. Prepare a copa/wine glass with ice 
  2. Pour in 45ml of Dry Vermouth
  3. Top up with Red Bull Tropical Edition
  4. Dash with bitters
  5. Garnish with Mint, Lime or Orange
  6. Serve ice-cold 

 

Where to go… 

Coops Corner Pub is just around the corner from you, but not just any corner. Prime spot, heart-of-the-viaduct sort of corner. Anyway, enough about corners. What makes this the perfect Friday destination, you ask? Well, it’s location for starters - you won’t find a better view of the harbour anywhere in Auckland - and the delicious menu, but we’ll get to that soon. But if you can’t find a table, any of the Viaduct establishments are sure to impress, with unmatched views of the City of Sails, and a general vibe of ‘seriously what a time to be alive’. 

 

What to eat… 

Coops Corner Pub offers a smorgasbord of delicious menu offerings, so you’ll be hard-pressed to select only a few. You’ll find all the bar classics, and lots of lighter options if you’re that way inclined. We recommend going in a large group so you can taste-test as many different things as possible, our favourite is the crispy tostadas served with fresh raw fish, iceberg, and tomato salsa, or if you have commitment issues, go for the Coops Favourite Platter and you’ll get a bit of everything.

 

What to wear… 

The new must-have summer colour is undoubtedly yellow.  One of our favourite New Zealand designers Maggie Marilyn is all over the trend, and her Dressed In Best Dress is a must-have. It goes perfectly with the Red Bull Tropical Spritz too, just saying…
